Garlic and Lemon Chicken with Red Potatoes and Green Beans

Here's an easy all in one meal to make that is destined to become a family favourite! This dish is gluten free, low in carbs, diabetic friendly and so easy to make.


What you need: 

6 tbsps. olive oil
2 lemons - 1 thinly sliced and 1 juiced
4 cloves garlic, minced
1 tsp salt
½ tsp freshly ground black pepper
Green beans - trimmed
8 small red potatoes – cut into quarters
4 chicken breasts

What to do: 

Preheat oven to 180°
Coat a large baking dish 1 tablespoon of the olive oil. 
Arrange the lemon slices in a single layer in the bottom of the dish.
In a large bowl, combine the remaining oil, lemon juice, garlic, salt and pepper. Add the chicken, green beans and potatoes and toss to coat. Pour into the pan and spread evenly over the lemon.
Roast for 50 minutes or until cooked through. Serve warm.
