Energy Balls

This is a fantastic recipe as it is quick to make, involves no cooking and is good for you. Just perfect for a snack. You can substitute other dried fruits or seeds to come up with your own version! 

Energy Balls


1 cup oatmeal (dry)
2/3 cup toasted coconut flakes (gives a nuttier flavour) or use shredded coconut
1/2 cup peanut butter (or substitute almond butter, cashew butter etc.)
1/2 cup ground flaxseed or wheatgerm
1/2 cup dark choc chips or cacao nibs
1/3 cup honey
1 tbsp chia seeds (optional)
1 tsp vanilla extract


Stir all ingredients together in a medium sized bowl until thoroughly mixed. 
Cover and let chill in the fridge for 30 mins. (This helps them stick together.)
Once chilled, roll into small bite sized balls.
Store in an airtight container and keep refrigerated for up to a week. (If they last that long!)

Chopped dried fruit - apricots, dates, raisins etc.
Dried berries - cranberries, cherries etc.
Chopped nuts and seeds - almonds, pecans, walnuts, sunflower seeds etc.
White chocolate, milk chocolate, M & Ms etc.
