Chilli Con Carne

I came across this recipe whilst searching for some healthy all in one meals that I can freeze for my family when I am away. We love a good Chilli Con Carne and this recipe is fabulous! I added more chilli then the recipe says and it certainly warmed us up! You can hide all sorts of vegies in here if you need to. Enjoy!

Chilli Con Carne
You will need:

500 - 700g lean beef mince
2 onions, finely chopped
1 tablespoon oil
3 cloves garlic, crushed
1 largel red capsicum, diced
2 large carrots, peeled and diced
3 sticks celery, diced
1 large can (820g) tomato soup
1 large can (800g) diced tomatoes
1 large can (750g) kidney beans
1 can (400g) chickpeas
1 can (420g) corn kernels
2 teaspoons dried oregano
2 teaspoons dried thyme
2 teaspoon dried basil
1 teaspoon ground chilli
salt, to taste
Corn chips
Sour cream 
What to do:

1. Heat oil in a large pot and then add the mince, onion, and garlic and simmer gently until mince is browned and onion is soft.
2. Add the remaining ingredients and continue to simmer gently for 1 – 2 hours or until chilli is rich and thick.
3. Serve with corn chips and sour cream.


• The can sizes listed above are guidelines so don’t be too worried if the brand you buy is slightly more or less as it won’t make a difference to the end result.
• This recipe will make a large quantity so you will need to use a fairly large pot. (Makes enough to feed 4 and freeze for 4 more!)
• Serve with rice or pasta.
• Mashed avocado goes well with sour cream and chilli.
• Tzatziki is a great alternative to sour cream.
• Add more chilli if you like it spicy or add sweet chilli sauce to individual serves.
