Chicken Parma Balls

Try these Chicken Parma Balls, so quick, easy and of course delicious!!! (Easy to modify for those fussy eaters!) 



Makes: approx. 16

Ingredients:
500g chicken mince 
½ cup breadcrumbs
2 tablespoons finely chopped Spanish onion (Red Onion) 
1 tablespoon chopped parsley
½ cup grated Parmesan cheese
2 tablespoons pizza sauce

Method:
Preheat oven to 180°C
In a large bowl ombine the mince, breadcrumbs, onion, parsley and half the cheese. Season with sea salt and cracked pepper. Using your hands, gently mix the ingredients together.
Shape into balls and place on a lightly greased baking tray. (Or use a baking paper lined tray)
Brush each ball with pizza sauce.
Bake for 10 to 12 minutes.
Remove and brush with more sauce, sprinkle with remaining cheese and bake for another 5 minutes or until cheese is golden and melted to the ball.
Serve with a salad or steamed vegetables or eat on their own! 

Tips:
Try using a tomato based sauce instead.
Hide some vegies by adding some grated carrot and zucchini to the mixture.
Use turkey mince instead of chicken for a different flavour.
For GF replace breadcrumbs with almond meal.
