Chicken and Spinach Meatloaf

This is a really yummy, easy, healthy dinner. Add a dollop of Greek yoghurt, a green salad and you have a delicious healthy meal for all the family.


Serves: 4
Preparation: 10 mins
Cooking: 45 mins

Ingredients:

500g chicken mince
3 spinach leaves - large
2 tsp lemon zest
2 eggs
1 cup bread crumbs
100g pine nuts
100g feta
2 garlic cloves
2 tbsp mayonnaise

Method:

• Preheat oven to 180 degrees.

• Finely chop spinach, zest the lemon, lightly beat eggs and place in large bowl.

• Add chicken mince, breadcrumbs, pine nuts, feta, garlic and mayonnaise to the bowl and mix together with your hands, (Yes, it is messy - but it really is the best way)

• Line a baking tray with baking paper and place meatloaf mix in the centre. Shape into a log like shape, smoothing with your hands.

• Bake for 45 minutes, the outside will just start to brown.

Tips:

• This meatloaf is suitable for freezing for up to 4 months or keep refrigerated in an airtight container for up to 3 days.
• Serve with a dollop of Greek yoghurt and a green salad.
• Can be eaten hot or cold.
